There are many things to look forward to with the start of a new year, such as tackling new projects, planning upcoming vacations and even just being able to unwind from the busy holiday season. At Provident, one of the first things we look forward to is our Souper Bowl potluck, though the end of tax season is a close second. There's nothing like savory soups and tasty sides to provide the extra warmth we crave during these winter months.

Of course, no Provident Potluck is complete without our fun Silver Spoon competition. At the end of each potluck, everyone votes on their favorite dish and the winner gets to showcase the Silver Spoon in their office. While the votes were close for this potluck, it was Alice who walked away with the Silver Spoon award. If you're looking for a new soup recipe to try this winter, we definitely recommend her Sausage & Green Pepper Soup shared below.

Sausage & Green Pepper Soup

Ingredients

1 Medium/Large Onion, diced

1-3 Green Bell Peppers, diced (set aside)

1-2 teaspoon Italian seasoning

1-16 oz. Jimmy Dean sausage roll (Original or Hot)

1 heaping teaspoon minced garlic

1-15 oz. Fire Roasted Diced Tomatoes

1- Can RO-TEL diced tomato and chopped green chilies (Original or Mild)

1 or 2 – 32 oz. Beef Broth &/or Chicken Stock (I mix the two).
(Less broth if you want more of a stew than a soup)

1-12 oz package Cauliflower Rice (frozen)

Directions

Place sausage in dutch oven or large soup pot & chop up while cooking
Add onion and cook until onion is translucent
Stir in garlic & Italian seasoning, but don’t burn the garlic!
Add tomatoes, broth & cauliflower rice, then let simmer for about 30 minutes to an hour
Add Bell Peppers after it’s been cooking a while, so they don’t get too mushy
*This soup can be made quickly on the stove or you can simmer in a crockpot

*This soup tastes better the 2nd day.

*Soup will develop a film from the sausage, which can be skimmed off before
reheating.

*Include cut up potatoes &/or bite size pieces of cauliflower instead of
cauliflower rice
